I usually use Nordic gods in my campaigns, so I would tell that's Loki or a chaotic trikster god like him appeared one day and started pranking people and pissed of everyone off to the point, where they tried to banish him. They asked some Wizard for help, but he fucked up and displaced himself in time. When the god learned of it, he got pissed and he made everyone fall asleap and dream that they had a mountain that walked away. Nobody talks about it cause they are not sure if it actually was a dream and they believe that the god will return if they mention his name. There you go, just use everything.

Tell that the mountain disappeared one day. When modern historians hear anything about the mountain existing they would write it off as a fairy tail or a mistake in the oral tradition that accumulated over the years. That way the mountain still exists in the stories and people do talk about it but there is no concrete evidence that the mountain ever existed and what happened to it because a large percentage of the surviving story is made up.
